Nimbus Pink Bourbon comes from high-altitude farms around Villamaría in Colombia’s coffee heartland. Pink Bourbon is a distinctive varietal celebrated for sweetness and complexity and in this lot, it carries through into decaf with impressive clarity thanks to innovative processing. The water pillow fermentation method gently builds fruit precursors before decaffeination, and the short transfer to the nearby Descafecol plant helps ensure the profile set at Jamaica is preserved into the green coffee.

Process

Experimental / Water Pillow Fermentation → EA Decaf

  • Cherries from smallholder farms around Villamaría are delivered to La Aurora and moved the same day to Jamaica washing station.
  • Water Pillow method: cold water over sealed sheets excludes oxygen, holding a stable, low temperature to gently encourage fermentation without harsh acids.
  • Anoxic washed followed by careful raised bed drying.
  • Decaffeination completed at Descafecol using sugar-cane EA to preserve profile.
  • The result is a decaf green coffee with clean acidity, fruit complexity and syrupy structure.

Sustainability & Packaging

Decaffeinated speciality coffee can often lose structural clarity during processing, but this Nimbus Pink Bourbon decaf is crafted to retain origin sweetness and complexity. A gentle fermentation followed by sugar-cane-based EA (ethyl acetate) decaffeination preserves as much of the coffee’s unique character as possible while reducing caffeine, offering a fuller flavour decaf that stands up to both espresso and filter brew styles.
