Story

Cafetos de Segovia was founded in 2015 by sisters Ana and Martha Albir Sotomayor, third-generation farmers in Nicaragua. Today they employ over 40 seasonal workers, with 19 women from Mozonte, and manage farms including Agua Sarca, El Naranjal, and Santa Helena. Las Naranjas, a 3.9 ha farm named for its orange trees, has been family-run since 1970 by Juan Carlos Herrera López. It exemplifies sustainable farming, fair pay, and dedication to community resilience despite climate change challenges.

Process

Natural process:

• Selective hand-picking of ripe cherries

• Floating to remove defects

• 18–24h fermentation before washing

• Clean transport in plastic bags/macen sacks to mill

• African bed drying under micro-tunnel covers

• Resting, hulling, and packing in Ecotact + jute to ICO standards

Sustainability & Packaging

Las Naranjas farm promotes shade-grown coffee with forest and fruit trees, eco-friendly pesticide use, and organic fertilisers. Harvest is manual, selecting only ripe cherries. Coffees are dried on raised African beds under micro-tunnels, never touching the ground. Farmers are rewarded with premiums for quality parchment. Cafetos de Segovia also supports social initiatives, training, and climate resilience strategies.
