A rare Laurina (Bourbon Pointu) micro-lot from Edinson Argote’s Quebraditas Farm in Cauca, Colombia. Naturally low in caffeine, this variety produces a delicate, tea-like cup with notes of citrus, mandarin and berries. Fermented with thermal shock and yeast inoculation before slow mechanical drying, it achieves remarkable clarity and balance. Scoring 85 SCA, this limited 60 g collector tin yields four small serene cups, a thoughtful gift for the true coffee connoisseur.
Orphaned young and self-made, Edinson Argote rose from farm labourer to renowned producer and quality expert. At his Quebraditas Farm in Cauca, he cultivates Gesha, Sidra, Ombligon and Laurina with precision and passion. This Laurina lot symbolises his journey and Colombia’s push towards rare, low-caffeine exotics that redefine specialty coffee.
Process
Experimental process with thermal shock and yeast fermentation:
Selective hand-picking of 90% ripe cherries
24h oxidation phase in drums
Dry pulping then washed at 50°C for thermal shock
72h yeast fermentation below 25°C
Final wash at 5 °C to seal flavour
48 h mechanical drying at 38°C then stabilised in GrainPro bags
