Scoring 90 SCA, this micro-lot demonstrates masterful fermentation precision, thermal shock and yeast inoculation, grown at 1,850 masl in Cauca, Colombia. Presented in a 60 g recyclable collector tin, yielding around four small cups, it’s an exquisite coffee for the connoisseur’s festive table.

Story

Edinson Argote, once a farm worker turned producer, leads Quebraditas Coffee Farms in Cauca with a vision to preserve soil health and pursue varietal diversity. His 18 hectares house traditional Caturra and Colombia plants alongside a dedicated plot for exotics like Sidra and Bourbon Pointu. This Sidra lot embodies his ambition to produce Colombia’s finest experimental coffees.

Process
  • Advanced thermal shock and yeast inoculation process:
  • 90 % ripe cherry selection and flotation for defect removal
  • 16h oxidation in drums → dry pulping → 24h oxidation to loosen mucilage
  • Washed at 45°C for thermal shock
  • Macerated Geisha/Sidra/Pink Bourbon pulp starter → yeast inoculation with Hybrid Saccharomyces strain
  • • 36h fermentation below 2 °C
  • Washed at 5°C to seal flavour
  • 76h drying (~40°C) then stabilised in GrainPro bags

Sustainability & Packaging

Quebraditas Farm focuses on sustainable agronomy. Shade management, organic matter, and balanced soil pH, while experimenting with exotic varieties such as Sidra, Wush Wush and Eugenioides. Edinson Argote’s processing is a model for precision and quality in Colombia’s Cauca region.
