Story

Coffee has been cultivated in El Salvador since the 18th century but rose to prominence after indigo declined in the 19th. Finca La Mercedes, owned by the Aguilar family, sits between 1,350 and 1,700 m and is renowned for quality Bourbon and Sarchimor varieties. Their approach pairs heritage with innovation, combining volcanic soils, disease-resistant varieties and modern processing for exceptional results.

Process

Honey process:

  • Selective hand-picking of ripe Bourbon cherries
  • Mechanical pulping retains mucilage for sweetness
  • Even patio drying with gentle agitation to prevent over-fermentation

The result is a vibrant, clean cup with fruit sweetness and a creamy body.
