Roaster’s Choice. This is the coffee that stopped me mid-cupping. A rare washed Maragogype from the remote mountains of Chiapas, grown by Don Ezequiel Díaz at 1,700 metres.
Bright citrus opens the cup, evolving into ripe mango and layered stone fruits, all carried by remarkable clarity and structured sweetness. Elegant, expressive, and beautifully clean.
I secured 5 kg of this lot because it genuinely stood out. Buying a larger volume allows me to offer it at a fairer price while keeping quality front and centre.
High above the Plan Libertad community in Chiapas, Don Ezequiel Díaz has spent over 20 years refining his craft. His focus is Maragogype a rare, large-bean Arabica known for elegance but often overlooked.
With support from Edelmira, Don Ezequiel refined his washed processing to produce a cleaner, more vibrant cup. At dawn, freshly fermented parchment is loaded into airtight bags and transported down the mountain to the wet mill.
Now developing a dedicated Maragogype nursery, he continues to push quality forward. This lot represents the clarity, care and commitment behind that journey.

Sustainability & Packaging
This coffee is grown in the highlands of Chiapas, where small-scale mountain farming and careful hand harvesting preserve quality at origin. The remote terrain means wet parchment is transported by horse from farm to mill. A low-impact process rooted in tradition. Clean washed processing and stabilisation ensure clarity in the cup while supporting sustainable mountain livelihoods.
