Story

Quebraditas Coffee Farms, run by Edinson Argote in Huila, Colombia, spans 18 hectares of traditional and exotic varieties. With advanced fermentation methods and soil-focused agronomy, Edinson creates differentiated, replicable sensory profiles. His journey from humble beginnings to pioneering Colombian exotics reflects dedication and innovation in every cup.

Process

Meticulous washed process with yeast inoculation and thermal shock:

• 90% ripe cherry selection and flotation to remove defects

• 24h oxidation in food-grade drums

• Dry pulping and further 24h oxidation to remove mucilage

• Thermal shock washing at 45°C

• 62h yeast-driven fermentation below 25°C

• Final wash at 5°C to seal the fermentation

• 76h drying at ~40°C, then stabilisation in GrainPro bags
